Hungary is known for its unique wines and there's no better or more romantic place to get acquainted with the country's centuries old wine-making tradition that at Faust Wine Cellar, a small and intimate wine bar housed in a cave in the Buda Castle wall. First, let's let the logistics out of the way. The place is very small and very popular, so you should phone or email ahead to make reservations (to give you an idea: we booked via email a week in advance and they only had two spots open during our five-day stay in Budapest). To get there, head to the Hilton in the Castle District and take the stairs around to the base of the walls and you'll see a fairy-tale looking iron door surrounded by ivy. That's Faust Wine Cellar! They have various wine tastings available including whites, reds, sparkling wines, dessert wines, and Hungary's infamous brandy palinka. We got the six-wine tasting of the sommelier's recommendation, something I'd suggest as the host is obviously very passionate and knowledgeable about Hungarian wines. We tried two whites, to reds, a sweet wine, and then had a call-back glass of our choice. You're ushered into a small cave with intimate candle-lit tables and a warm, hushed atmosphere that feels miles away from the tour buses and snapping cameras of the Castle District. The sommelier passionately explained the history and region of each wine, which ranged from small-batch (300 bottles) boutique wines to some seriously tasty reds packed with tannins and aromas. One nice thing about the sommelier is that he lets you guide the tasting in a very appreciated way. If you're a wine connoisseur and want deep discussions of notes, methods, and the like, he'll be more than pleased to engage you all you want. On the other hand, if you're really there to just have a romantic afternoon with your special someone and drink some good wines, he'll explain the wines and then leave you to enjoy the wines and the atmosphere at your leisure. It's really up to you in that sense. All and all, we left happy, warm, well-informed in the basics of Hungarian wine and, I have to admit, a bit drunk after seven generous glasses of wine. I couldn't recommend the place more. I'd suggest checking out the various tastings offered on the website and then reserving a table ahead of time via email (they responded to me within a matter of hours). Cheers!
